Since Caribbean Princess isn't out yet and doesn't have a twin that is... I can only go by the ones that are out there.  The door doesn't really have a key per-se, but the latch has a square channel where the steward slips in a rod that fits in to open the latch.  You can push the door closed, but you can't latch it without sticking the "thing" in there and turning it.  Maybe the steward would have an extra that could be left in... but I'd guess not, since it would be a pretty popular request.  Maybe you could find something else to stick in there to turn the latch.... or just push the door closed and hope your cruise mates don't open it.
