Just wanting to know a last minute question not that it may be possible but what if we wanted to bring our daughter along .. she is 25 and we have a porthole room . DO they have cots they bring in for an extra person or how does that work ?

That type of cabin is probably not suitable for a third bunk, by the time you got a roll-a-way in there you wouldn't be able to turn around, but would be worth having your TA check into it also you could check into a switching to a quad if there is one available, room wise that would be your best bet, that would already have the extra bunk in it.

I third it, call your TA and see if it can accomodate three..if so it should be no problem to add on a third person.

I agree -- call and ask, but also be aware that it depends on how booked the ship is. If the ship is almost sold out, Carnival may not allow you to add a third person to your cabin, even if they could put a rollaway in there.
