Quinoa - KEEN-WAH Salad

Quinoa - KEEN-WAH Salad

1 Red Pepper – diced
½ English cucumber – diced
½ cup shredded carrots
1 T Olive Oil
1 Medium Onion, finely diced
1 garlic clove – finely diced
1 tsp ground coriander
salt and pepper
1 cup quinoa - cooked
1/2 cup fresh parsley
1/3 cup walnuts coarsely chopped
1 cut coarsely grated Provolone

Directions

In a bowl, combine red pepper, cucumber, carrots, olive oil, onion, garlic coriander, and season with salt and pepper. Add quinoa and stir to combine. Add parsley and provolone, stir. Serve chilled.

Corky, this sounds so good! We love quinoa and I am always looking for a new salad or something to make with it. Thanks for sharing.

JK- you're welcome. I actually leave the cheese out, just because I don't really cook with it or eat it that often for that matter, but try it that way and see how you like it. :)

Also, I always try to make it the day before so all of the flavors can meld together. Yum!

Hi All..............

I'm always looking for something NEW and different to make to eat and when I came over here and saw this posting I just had to look up what the heck QUINOA was. I had a idea it was something like Couscous and it was. Now I can't wait to buy some at our local Whole Foods Store and try this recipe.

I went to our local Veggie store and bought my usual stuff and made sure I had everything for the Kenn-Wah Salad. Well, I paid at the register and just couldn't understand WHY my bill was SO much for the few things I bought. So I stepped aside and looked at the receipt. GOOD MOVE. The package of QUINOA Grain was $9.49 for the pkg!! :duh: Yikes, I just couldn't justify that cost and returned it and got my money back.
I'm going to try the Bulk Food store next time I go to it and see if they have it. Then I can just buy what I need for the recipe!!
Just had to share that with you. Sorry it was so long.

Hi Kathie-K2 - Thanks for posting that information here as I had forgotten to mention it. Yes, you can't buy it packaged or it will break the bank. I buy it in the Bulk section and pay, I think, $1.99 a pound for it. Plus, in the bulk section it is Organic. I just do not know why it is so expensive in the boxes by the other grains in boxes as they aren't extra expensive. We wouldn't be eating it either at that price! :D

Kathie-K2...I also add a 1/2 cup to beef stews to create a sort of gravy if you will. Figured it was better that way than a flour gravy, and it is tasty.

I've also made it with chicken broth and cooked broccoli for a hot dish.

Also, I get mine at Krogers in the health food section out of the bulk containers. At our Real health food store here in town, it is 6.99 per pound, but a pound of quinoa is a lot, so maybe not so bad of a price.
