Great to see more people joining in on the roll call! I'll tell you what I can about the excursions that the wife and I are going to do. I've been doing a bit of research on this and a few other sites, so I got a good idea of what we'd like to do!
In grand cayman we booked through
http://grandcaymancruiseexcursions.com/ and we're doing "bucaneer catamaran" or something like that. It's a 3 spot snorkel catamaran trip that includes a stop at the infamous Stingray City. It's a lot cheaper than anything through the ship. I think it was $39 each. There's also a city called "Hell" that some of the city tours stop at. We were thinking of going there to mail out postcards maybe
In Roatan we are going scuba diving. From what I can tell Roatan is a beautiful tropical paradise. But...a St. Thomas it is not. I don't think you'll find much in the way of shopping or restaurants. It sounds like this is one that you should def research and make sure you have something to do. When I was looking for our dive shop I found this page:
http://www.roatansaltnpepper.com/cruiseship.htm They do some sort of a Cruise Ship party that looks like it would be pretty good. I think it includes drinks, food, activities and a private beach, etc for about $29 each. Might be a fun thing to do.
In Belize we're going to do the Cave Tubing. We booked through
http://belizecruiseexcursions.com/ and only paid $60 each. The same trip through the ship is $90 or $95 each. Everyone raves about this excursion. You take a bus ride for about an hour and then a short hike for about 30 to 40 minutes w/ a tube and then you splashdown in the river and start drifting towards the caves. They give you a light that mounts on your head (like a miner) and you get to float through these amazing caverns. It's really great from what everyone says, so we're going to do it....it's the most unique thing we've had the oportunity to do. There are also Mayan Ruins in Belize but we're going to pass on them this time.
In Cozumel we are diving again. But we are also going to go to Carlos and Charlies....which is supossed to be the hot spot in town. All my friends that have been say that it's a great time. Huge drinks and lots of people dancing on the tables. I'm also thinking of checking out their sister restaurant/bar Senor Frogs. We will probably do some shopping for silver and some soveniers while in Cozumel too. As far as other excursions the only thing I know of is the snorkeling. I know there are a lot of options through the ship though.
