Ruby Princess Excursions this weekend - NEW CRUISER QUESTIONS

I'll be on the Ruby Princess cruise to the Western Caribbean with my 79-year-old mom this coming week.
She's in good physical shape, but of course not up to climbing the falls or any other physically challenging tours.
But we'd love to see as much as possible of Jamaica (and do a little shopping without hassles),
see some ruins or really get a feel for Cozumel, and again, really get a feel for Grand Cayman (a snorkeling tour would be
too physically strenuous for her, although I'm a water baby and would love to at least poke a mask in).

Does anyone have any thoughts? There are so many tours offered through the ship, and it's hard to know what's
really touristy and what gives a good feel for places. We both love art, museums, ruins, the ocean, great food and
just getting to know people in new places. Also love photography.

Any thoughts or suggestions?

If you're going to be in Jamaica I would suggest rafting on the Martha Brae River. No physical challenges at all. Great for relaxing and for photography as well. Here's a link for more information.
