My husband has celiac sprue and I we have been on two Celebrity cruises, the Constellation and the Galaxy, We have always found the dining staff to be very accommodating to his gluten-free needs. As the previous poster said, the waiter or maitre'd presents you the menu the night before and you tell them what you want to eat for the following night. Most of the time they can prepare the meal gluen-free. We have found that the soups often contain flour, but the chefs are usually able to make the soup without flour. Also, if one of the dishes has a sauce, they will leave the sauce off. They'll also do this for breakfast and lunch. What I have found most impressive about Celebrity is that they will make gluten-free bread for you. Overall, I have been very impressed with how Celebrity has been able to accommodate my husband. In fact, one of the reasons why we take Celebrity, is because then accommodates gluten intolerances so well.
