I can't answer your questions about specifically gluten-free items.  However on our Infinity Alaska cruise we faxed Celebrity our dietary requirements as a request to the chef several months before departure.  We weren't too hopeful given how noncommital the person I'd talked to on the phone had been but they suggested doing it while  not guaranteeing anything.  To our delighted surprise there was a message waiting for us when we checked into our cabin asking for a meeting with the head chef, maitre'd and headwaiter to discuss our needs!  We expressed our sincere appreciation for their accommodation and were rewarded with so much individual attention, service, and superb food (kosher vegetarian with a few other specifics) that the rest of our party, who had no special dietary needs,  were envious the entire trip.
