This is too funny! I was actually the original poster of this thread under the i.d. endde. I am now Royalgirl. This was now two years ago and I still crave this smoothie. Never had one like it since although now I will scarf down anything coconut related because of it! My son just brought me home a slice of coconut cheesecake! lolI would still love the recipe, but I don't know if I have the umpf to dive into a real coconut for the ingredients. I'm leaving for a cruise in less than 3 weeks but unfortunately not to St. Maarten. I'm so jealous you got to have them Mainer!!!!
