Ship Maven for telling us about Mal's wonderful creamed spinach and Mal, for sharing your recipe with us. It is now a keeper in my recipe book and the family loved it. I'll be making it again on Saturday when we have post Christmas festivities with my family in NJ :thumb

Folks, this dish is so easy to make and can be made a day ahead. Yummy and PERFECT for the holidays! :thumb

here ya go Denise,

Spinach Casserole

3 packages frozen chopped spinach
3 cups grated sharp cheddar cheese
¼ Cup Parmesan Cheese
1 10oz Can Condensed cream of mushroom soup
3/4 cup mayonnaise
3/4 cup sour cream
2 Tbls. minced onion flakes
Dash or two of Cayenne Pepper

Cook Spinach per package directions and drain well. Mix all other ingredients together and then stir in spinach. Place in casserole dish.

Bake 35 to 40 minutes at 350o, stirring once half way through cooking time.

This can be made ahead and kept in the fridge to cook the next day, and it also reheats very well in the microwave!

Oh yes! This will be a keeper for us also.

SunFlower thought I had lost my mind when I started fixing it (as our fridge is already crammed with left-overs), but relented when I ate most of it and took the rest to wurk.

It's really very good. Normally I avoid spinach anything as my standards do not include "health foods". However, with all the cheeses, sour cream and mayonaise, I can rest assured that I can get some extra vitamins and still continue to clog my arteries.

p.s.- The night shift nurses like it too.
