I've found that preparing our tip envelopes at home before the cruise eliminates the worry of having the right cash at the end of the cruise.  I put the cash for each one in an envelope with a brief note of thanks or a thank you card, but don't seal the envelope in case I want to add a little more for special services.  By the end of the cruise we know names and can write the names on the envelope.
