In Grand Cayman we have done the "Swim with the Stingrays". It is excellent.It is cheaper by far to just get off of the boat and go with the locals rather than pay for a ship excursion. They are usually just off of the dock and will have signs as to the factthey are "stingray guides" It is about 2.5 miles off shore and the water is waist deep!You should also get some good snorkling in.If you get an underwater disposable camera, you can get some really good pictures!
