We did this for both sets of parents in July as a Christmas in July thing. (we're going on the trip, too). I made up a flyer announcing this on very colorfull, flowery paper -- Itinerary, Ports of Call, Cabin type, etc... I then took this plus the Full Color Carnival Book from the TA. I highlighted the ship section and even marked their cabins in each book (I booked a specific cabin number for each couple). I wrapped this up in pretty, colorful paper. Not all that creative but... you could give a basket of disposable and / or underwater cameras, sunglasses, sunscreen, hats, go to a local Party Supply Store and get Luau / Beach party stuff, beach balls, etc and also Bon Vage party stuff ...
