Vanilla Extract

10 vanilla beans - split lengthwise
1 liter vodka

Place vanilla beans in vodka bottle and seal. Store in dark kitchen cabinet for a month, shaking the bottle once a week - at least. 6 months of storage brings out the best flavor but it is fine after the first month. After using, replace with more vodka. The same beans are good for about a year. If a batch has weak flavor toward the end of the life of the beans, strain out the beans and throw in some new ones.

Hey Twinkles - do you think if you took the 10 beans, split them, and then put two halves into a small 4 oz or 6 oz bottle, and then poured in the vodka, that one split bean would be enough for each bottle?

NiteStar - I get mine in the spice aisle at the grocery store. Get the plumpest ones you can find. My favorite is Rodelle Vanilla Beans. They are grown in Madagascar and are very thick and plump. They say they are Bourbon vanilla beans, but I do not know what that means, as no where does it say they are Soaked in bourbon...so maybe it is just a type of vanilla bean.
