Veggie Side Dish for Thanksgiving

Anyone have a recommendation and recipe for something different then green bean casserole and sweet potato casserole. I am looking for something new to add to the menu. We will still have both of those along with mashers, fresh cranberry sauce and Waldorf salad.

Denise - This year I am making Mashed Turnips with Crispy Shallots from the Barefoot Contessa's cookbook. This will be with the butternut squash, mashed potatoes, corn in butter sauce, green bean casserole, cranberry orange relish, 2 types of stuffing (sausage & apple for dh & me and Stove Top for dd), rolls. Good god - that's alot of food for the three of us! ::eek:

I haven't been able to eat Thanksgiving dinner in over three years due to surgeries and this year I am making up for it big time!

One Year I took Acorn squash, halveded them, scooped out the seeds and sprinkled with salt, pepper a little garlic powder and baked them. About 1.5 hours at 325. Then when they are finished add another pat of butter while still warm before serving and garnish with fresh parsley.

Or, you can use them cooked like that as bowls and add another vegetable inside like corn or peas or even frozen mixed veggies. That would add alot of color. Other than cutting them in half and seeding them no work. You leave the skin on.

Here is a mutation :lol of the green bean casserole. A lot different taste, but goes over GREAT everywhere I take it...

Vegetable Casserole
16 Oz can french style green beans
16 oz can white corn
1 can cream of celery soup
1/2 C grated cheddar cheese
1/2 c chopped celery
1/2 c chopped onion
1/2 c sour cream
8 TBLS margarine
1 stack of crushed Ritz Crackers
1/4 - 1/2 c slivered almonds

Drain Veggies. Mix w/ soup in a 2 qt casserole dish. Add: Cheese-Celery-onion & sour cream. Mix well. Melt butter. Stir in crackers & almonds - spread over the vegetables. BAKE at 350* for 45 minutes.

I made this over the weekend for a camping potluck dinner. I just now realized I forgot the cheese (and I didn't have almonds in the camper, so just put some bacon bits over the cracker mixture). It still went over fantastic. 8 adults and the bowl was licked clean!!! I can't help but chuckle that it didn't even have the cheese in it!! Everything is better with cheese. :lol

:)My favorite is the white shoepeg corn and green chile casserole. The boys love it so I make a double recipe. Besides that, it's easy.

Baked Brussel Sprouts

Take 2 to 4 bags of Frozen baby brussel sprouts - must be frozen, not fresh. (I used the Pic Sweet brand)

Put into a glass casserole dish (do not use metal) use glass or corning ware.

Put just enough olive oil on to glisten each brussel sprout. But do not saturate. Sprinkle with Salt & Pepper.

Bake at 350 for 1 hour, stirring half way through. They will brown up a bit on the outside. These are delicious this way.

Take a variety of squash,butternut,acorn ect,halve and cook at 350 degrees about 2 hours. Use about 8 pounds.Cool squash to touch after removing from oven,then scoop out seeds. Place meat of squash in a food mill and hand grind the meat into a big mixing bowl. It takes time but worth it,you will get a rich orange color from the different squash. Then add 3/4th cup of brown sugar,salt and freshly ground pepper to your taste(I Love lots of pepper and 1 and 1/2 sticks of room temperture butter. Mix it all together,bake again at 350 for 1/2 hour. It is so yummy,making stickneti(norweigan) with it, which is lefsa and you put the turkey and squash in the lefsa and roll it up and dip it in hot gravy or just put a big helping of squash on your plate and roll a piece of turkey on your fork with squash as well,what a yummy surprise.

I've made a baked corn casserole before. It was quite yummy. Basically it was like cornbread, but with the corn baked in - and lots of other bad for your stuff like sour cream, 1/2 and 1/2, etc. Needless to say, it won't be on my Weight Watchers friendly menu this year! :)

Another veggie dish is:

Take dried fruit - raisins, apples, pineapple, and mango - put into a large ziploc bag and put in 1/4 cup dark rum. Get all of the fruit wet. Store in the fridge, turning often and let marinate for 24 hours.

Take a large bag of frozen brussel sprouts, two large sweet potatoes, two large potatoes, a small bag of baby carrots, two large parsnips, and two medium onions - quarter all veggies except for brussels and carrots and put them in a large casserole dish. Pour the marinated fruit over the top of the veggies and stir, mixing well. Bake at 350 for 1 hour, stirring half way through. Adding roasted red peppers at the 1/2 point works too.

Here is a recipe I got from a co-worker:

Copper Carrots

2 lb. Baby carrots
1 small green bell pepper diced
1 small onion chopped
1 can tomato soup
3/4 c vinegar
1 cup sugar
1/4 cup oil
1 tsp Worcestershire sauce

Steam carrots until tender but firm. Drain and cool. Mix other ingredients then add cooled carrots. Mix together, chill overnight and serve.

All sound very interesting. Paw is already complaining abt number of dishes I want to fix so afraid this years veggies are getting neglected just going straight to comofort food of noodles and dressing.

not sure how comfortable you are experimenting in the kitchen; a couple years ago I made acorn squash rings and filled the middles with sweet potato cubes

It was a neat presentaton and was a big hit. I don't have a recipe for it, though. Cinnamon and ginger bring out the flavors of the squash nicely. (just don't boil them).

I stirred and seared the potatoes in a pan first and put the potatoes in the middle of the rings and baked in a 325 oven for around 20 minutes. (may take longer, depends on how big you cut the acorn squash 'rings').

Then I garnished with dried sweetened cranberries (these can be bought at the market, Ocean Spray "Craisins" work great), but you can also buy the bulk stuff.

I have a really good red and yellow pepper soup recipe, if anyone would like it. It's nice because you actually make the red soup separate from the yellow soup, and then because of the thickness of the soups you can put them both in the same bowl, side by side, and it's a really pretty (and really yummy) presentation. This was also a big hit.

how to prepare the acorn squash rings

Preheat oven to 400 degrees.
Slice top and bottom from each squash and discard ends. Carefully slice each acorn squash into four rings, making eight rings in all.

Spray a large cookie sheet with cooking spray.

Lay rings on cookie sheet and bake for 15 minutes.

Combine maple syrup, marmalade and ginger in a small bowl.

Remove squash rings from oven and brush with maple syrup mixture. Return to oven and bake for another 15 minutes. Remove from oven and brush with glaze once again. Bake for 10 minutes, or until tender.

the sweet potato side

4 tablespoons vegetable oil, divided
4 pounds red-skinned sweet potatoes (yams), peeled, cut into 3/4-inch chunks
1/2 cup pure maple syrup (preferably Grade B)

3 tablespoons unsalted butter, cut into 1/2-inch cubes
Drizzle maple syrup over sweet potatoes and toss to coat. Roast until sweet potatoes are tender and syrup is reduced to glaze and coats sweet potatoes, about 20 minutes. Remove from oven; scatter butter cubes over sweet potatoes and let stand until melted. Season to taste with salt and generous amount of cracked pepper.

like i said, you'll have to modify, remember sweet potatoes can get mushy fast; so watch that; because after you make both parts, you will need to put the cubed potatoes in the middle of the acorn rings and heat in the oven to complete the cooking

Broccoli Casserole (very good!)
2 10 oz packs frozen chopped broccoli, cooked and drained well
1 C mayo
1 can cream of mushroom soup
2 eggs beaten
1 onion finely chopped
1 stick oleo or butter
1 1/2 C grated cheddar cheese
1-2 C PEPPERIDGE FARM HERB DRESSING**
Mix mayo, soup, eggs and onion. Add to cooked broccoli. Place in oiled casserole dish. Sprinkle with cheese. Melt oleo/butter and stir in dressing and cover top of casserole. Bake covered about 30-40 minutes at 325*. Serves at least 8.
**I have tried it with all different toppings and this brand REALLY makes the dish. Do NOT use the cubes. Use the "crushed" stuffing mix.
