A lot of the problem stems from moving between the cool (and reasonably dry) air of the ship and your cabin and the hot humid air of the Caribbean.  


There are several things you can try, one has already been suggested, leave it in the bag, take the lens cap off and put the whole thing out on the balcony if available) with the bag unzipped.  If you store it with the tape out, try using a small silicon pack (typically called moisture munchers) in side.  You can get them at a good camera shop or a dive shop.  To keep the lens from fogging, you can get lens or glass cleaner in small spray bottles that prevents fogging.  Try a camera shop or an eyeglass shop like Lenscrafters.
