OceaniaCruises, the world’s leading culinary- and destination-focused cruise line, introduced 16 new, enriching, and exciting cooking classes for the 2018 European season aboard the 1,250-guest Marina and Riviera. Oceania Cruises is widely recognized for its groundbreaking culinary enrichment offerings, including the introduction of the first-ever Culinary Center at sea equipped with individual induction cook top work stations. The new programs were developed by longtime Director of Culinary Enrichment, Chef Kathryn Kelly, and will debut with the first European sailings of the year this April and May.

Slice: Mastering Chef Knife Skills In partnership with the world-renowned Zwilling Company, makers of the chef-favorite J.A. Henckels knives, Oceania Cruises has developed one of our top guest-requested classes – a comprehensive knife skills class. Participants will get a chef’s look at a complete pantry of knives and enjoy the chance to try out a few chef knives to discover the best option for you. They’ll also learn how to sharpen and maintain this essential kitchen tool, practice various knife cuts and discover how to safely use the mandolin slicer – Chef Jacques Pépin’s favorite kitchen tool. At the conclusion of the class, all participants will receive a special Knife Skills certificate along with a savings voucher for their favorite Zwilling Company knives.
Rethink the Crêpe While most people may think of the crêpe as French cuisine, this little envelope of love is popular everywhere and enjoyed in many variations the world over. From authentic buckwheat galettes to sweet crêpes Suzette, the recipes in this class will reveal or renew your passion for crêpes and their luscious fillings and toppings. The Cruise Addict and I were sitting on deck under a magnificent sunset on the first port day of the cruise with four couples we had just met. We talked about how-was-your-day and what-did-you-do as the ship sailed out of port. A story: ~~~Our friends were late to breakfast, and Natalie seemed quite flustered when they finally arrived. Damp, too. We pried the story out of her; it’s what friends do. Seems her husband had gone to bed early the previous night, while Natalie went to Deck Sixteen to admire the stars. By the time she made her way to the cabin, Jim was snoring, with the lights off. She is much more considerate than most people –certainly more than I—so she silently slipped into bed in the pitch dark. Natalie awoke in the morning with an odd sensation on her head. Upon investigation, she discovered her hair was glued to the pillow!
She pried her hair free, turned on a light, and was aghast to see chocolate smears on her pillow, sheet, mattress, face, nightclothes, and, of course, in her hair. Jim woke up suddenly to see his chocolate- covered wife frantically scrubbing the bedding. Seems the steward left extra chocolate on their pillows the night before, and Jim thoughtfully scooped his candies onto Natalie’s pillow, and in the dark, the warmth of her head made a remarkable mess.
The cabin steward assured them he had cleaned up much worse and offered to put the nightly chocolate on the desk, henceforth. We suspect he had a good laugh, but he was kind enough to do it out of earshot. On your next cruise you’ll remember to bring a nightlight, or prop your bathroom door open just a little, with the light on.~~~

Holland America Line is cultivating the expertise of the seven members of its award-winning Culinary Council by entrusting each chef with a designated onboard dining experience to enhance and elevate. The Culinary Council comprises a collection of elite international celebrity chefs who bring global influence to every dining venue across the fleet.

Dutch-born Jonnie Boer is the driving force behind De Librije, a regional, fine-dining restaurant in the Netherlands. David Burke Influences the Pinnacle Grill Menu A leading pioneer of unique, contemporary American cuisine and a master of French culinary technique, Burke will continue to enhance the menu at the Pinnacle Grill, adding contemporary flavors and new signature recipes. Burke partnered with Smith & Wollensky CEO Alan Stillman to open the critically acclaimed Park Avenue Café, and then, in 1996, he became vice president of culinary development for the Smith & Wollensky Restaurant Group. Andy Matsuda Brings Top Sushi Trends and Techniques The newest member of the Culinary Council, Matsuda will lead sushi offerings in Lido Market as well as the sushi menu available in Tamarind on select ships. Aboard Nieuw Statendam, Matsuda’s creations will be featured at Nami Sushi, the new sushi bar inside Tamarind. The Japanese-born chef is at the forefront of sushi trends and techniques. At Matsuda’s Sushi Chef Institute in Los Angeles, California, he teaches aspiring chefs and professionals about sushi and Japanese cuisine.
Ethan Stowell Celebrates the Flavors of the Pacific Northwest A recent addition to the Culinary Council, Stowell will bring the unique flavors of Alaska and the Pacific Northwest on board ships sailing in the region. Also known for his pasta and Italian dishes, Stowell will introduce several of his recipes at New York Pizza and select Lido Market stations on all ships. With an impressive roster of highly acclaimed restaurants, Stowell has helped to change the face of the Seattlefood scene. He was named one of the Best New Chefs in America by Food & Wine magazine in 2008 and chosen as one of the Best New Chef All-Stars in 2013.
Jacques Torres’ Chocolate Confections Are a Sweet Indulgence A world-renowned chocolatier known as Mr. Chocolate, Torres will guide masterful chocolate desserts for Holland America Line’s dining venues, as well as the Chocolate Surprise Dessert Parade featured on the last gala evening of every cruise. A French-trained Master Chef and artisan chocolatier, Torres is a James Beard Award recipient. After rising to executive pastry chef at New York’s legendary Le Cirque, he opened a chocolate factory and stores throughout New York. Torres is co-hosting and head judge on the new Netflix culinary show “Nailed It” with Nicole Byer. Debuting March 9, the reality contest program pits home bakers against one another attempting to recreate edible masterpieces.

Carnival Cruise Line recently announced it has added another 20 voyages to Cuba aboard Carnival Paradise from Tampa in 2019, complementing the 11 cruises to the island taking place aboard the vessel through next year.
The new voyages aboard Carnival Paradise are in addition to the 17 recently announced Cuba cruises aboard Carnival Sensation departing from Miami in 2019, indicating that more and more travelers view cruising as a great way to experience the destination.
“Our Cuba cruises have been met with phenomenal guest response since we began sailing to the island last year and we’re thrilled to add yet another 20 voyages to this fascinating and sought-after destination,” said Christine Duffy, president of Carnival Cruise Line.
Six, five-day voyages featuring a day-long call in Havana and a visit to Cozumel – departure dates include Jan. 5, March 16, May 11, Aug. 31, Nov. 9 and Dec. 7, 2019;
Four, five-day sailings featuring day-long calls to Havana, Key West and Cozumel – departing Feb. 16, June 8,July 20 and Oct. 12, 2019.
Guests sailing on Carnival’s Cuba cruises can select from nearly 20 different shore excursion experiences that showcase the island’s vibrant culture, majestic beauty and centuries-old architectural landmarks. A variety of Cuban-themed activities and entertainment, including the sizzling Amor Cubano: A Caribbean Dance Romance Playlist Productions show, Havana-inspired deck parties, trivia contests and salsa lessons, are also offered. There’s also an onboard Cuba expert who discusses the country’s rich history and culture.
Carnival Paradise completed an extensive, multi-million-dollar refurbishment last month that added a spectacular water park, 38 new cabins, 98 balconies to existing staterooms, and an a host of exciting food and beverage concepts. New spaces include Guy’s Burger Joint developed in tandem with Food Network star Guy Fieri, the poolside RedFrog Rum Bar and BlueIguana Tequila Bar, the BlueIguana Cantina Mexican eatery, a new Camp Ocean marine-themed play area, a nine-hole miniature golf course, a Pixels-branded digital photo platform and enhanced retail offerings including boutiques from Pandora and Guess.
The visits to Havana comply with regulations of the U.S. Department of Treasury that permit travel operators to transport approved travelers to Cuba to engage in activities as defined by the U.S. Department of Commerce, Office of Foreign Assets Control. Holland America Line revealed the name of its new 99,500-ton cruise ship slated for delivery in February 2016 will be ms Koningsdam. While the name pays homage to the company?s rich heritage and deep roots in the Netherlands, it also reflects a new era with a bold name that is an original in Holland America Line?s 141-year history. The 2,650-passenger ship is an evolution in design for the line ? a new Pinnacle Class ? and is being built at Italian shipbuilder Fincantieri?s Marghera shipyard.
Since 1883 every Holland America passenger vessel has borne the ?dam? suffix, and ms Koningsdam carries on that tradition. The word koning means ?king? in Dutch, and the name celebrates the majestic new ship. The name also pays honor to His Majesty King Willem-Alexander, the first king of the Netherlands in over a century.
When it debuts in February 2016, ms Koningsdam will be a new type of ship for Holland America Line. At 99,500 gross tons and carrying 2,650 guests and 1,025 crew members, the vessel is the largest ever built for the company. The increased size provides more opportunities to add new public spaces and venues, and several innovative features will debut on ms Koningsdam. Familiar spaces and amenities currently featured across the Holland America Line fleet will also be found on the new ship.
To bring a fresh vision to ms Koningsdam, Holland America Line tapped Adam D. Tihany, one of the world?s pre-eminent hospitality designers. Tihany joins distinguished maritime designer and architect Bjorn Storbraaten who worked with Holland America Line on ms Nieuw Amsterdam and ms Eurodam. The two firms will create a modern and contemporary ambiance while incorporating Holland America Line?s classic hallmarks.
Travelers looking to plan ahead and book their future Holland America Line cruise vacation can take advantage of the Ready Set Sail promotion featuring pre-paid gratuities, reduced deposits and exceptional rates on nearly all of the cruise line’s worldwide itineraries. Guests who book a Holland America Line cruise by June 14, 2018, will be eligible to receive the offer, and guests who book a suite also will receive up to $300 onboard spending money per stateroom.

Polar adventurers aboard Poseidon Expedition’s 114-passenger vessel Sea Spirit will benefit from advanced technology when the ship is equipped with new retractable fin stabilizers next year.
The company announced today that the 4,200-GRT vessel will be retrofitted with Rolls Royce Zero Speed Stabilizers during the scheduled dry dock in May 2019 in Lisbon, Portugal, just prior to the commencement of the 2019 Arctic season.
According to Poseidon Expeditions’ Senior Director of Cruise Operations Nikolay Zakharov, “These new stabilizers will provide high-performance roll damping whether the Sea Spirit is underway, while drifting or even at anchor. They incorporate time-tested trailing edge design that eliminates vibration and noise. At the same time, they look to the future with safeguards to protect the polar ecosystems. The stabilizers are fully compatible with environmentally acceptable lubricants (EAL) and feature quad main seals for additional redundancy.
“The current Blohm & Voss stabilizers have served us well, but the new Rolls Royce system uses a computer-based programmable logic controller (PLC) that develops different algorithms depending on conditions. The result will be a ride for our passengers as comfortable as aboard any expedition ship currently coming into the market,” he said.
The improvements will be made at the same time that the Sea Spirit will be re-certified for new IMO Polar Code requirements. Currently, the vessel has all valid technical and international certificates complying with IMO conventions to provide tourism activities in polar waters. An excellent way to explore the Mediterranean coast of Turkey is by sailing the sea on a classic wooden gulet boat, however if this is not your first visit the south of Turkey or you have a little extra time left of your vacation then there are also a lot of interesting sights to see on land via organized Turkey tours. From archaeological sites to natural wonders and quirky towns there’s plenty of exploring to be done along the Mediterranean coast and in the foothills of the Taurus Mountains.
A Splash of History
The south of Turkey has a fairly long and complex history with the region being dominated by various ancient civilisations and subjected to multiple raids, invasions and natural disasters over the centuries. Ancient Greeks were among the first settlers to the region however little is left of their cities aside an amphitheatre in Kas and scattered Amphora’s laying on the seabed in Tarzan Bay. Romans and Byzantines have also ruled and their ruined castles can be found on isolated hilltops, meanwhile the cities and towns on the Mediterranean display mostly Seljuk-Ottoman architecture with pretty white facades and red tiles roof as well as mosques converted from Christian Churches. However the majority of the archaeological sites in the south of Turkey come from the Lycian era when fearsome Lycian warriors built strong fortresses and grand cities.
Lycian Ruins
Despite their best efforts the Lycian empire eventually came to an end and their cities and fortresses fell to ruin, although many of their elaborate burial sites are still more or less intact and hidden among the hills and between the rural villages of the Mediterranean coast. One of the best preserved sites in Patara, where you can walk between the stone pillars of the royal entrance way to a restored theatre and small museum, before exploring the larger theatre which often occupied by families of goats. Within a short distance are the remains of Letoon and Xanthos, both are UNESCO World Heritage Sites and accessible by bus from Fethiye. Or, take a small boat from Dalyan, a quaint tourist town, to pass below the city of Kaunos, where huge decorative tombs are carved into the cliff face while the city itself sits partially below emerald green waters and reed banks of the Dalyan Delta. This ancient site is unique as legends say that it was not destroyed by any raid or earthquake, but by the tears of King’s heartbroken lover.
Hidden Canyon
Located between the seaside towns of Fethiye and Kalkan is a natural wonder, the Saklikent Canyon, or Hidden Gorge. Here a narrow river descends from the snow capped peaks of the Taurus mountains, carving a 300 metre deep stream of water through limestone walls for over 18 km. Entrance to the canyon is via a metal boardwalk suspended around 50 metres above fast flowing rapids. Once inside you can walk for 2 km in the icy water, under wedged boulders to a small waterfall, or join a canyoning tour to travel deeper into the canyon. You could also rent an inflatable tube and float downstream for about an hour, and when you’re ready to dry off grab a bite to eat in one of the riverside cafes.
Extreme Sports
The Mediterranean coastline is ideal for adventure sports and thrill seekers and not all activities are based on the sea. In fact along the coast is are some of the best locations in the world for Paragliding, head to Kas for more isolation or travel to the peak of Babadag to float above the stunning beach and famous Blue Lagoon at Oludeniz. Or, travel to Dalaman for grade 3/4 white water rafting. You could take jeep safari or quad biking excursion on your Mediterranean tour of Turkey, go horse riding on Patara beach, like you’re in an old romantic movie, or climb to caves in sheer cliff faces above Olympos and Geyikbayiri.
Long and Short Distance Hiking
The hills and valleys along the Mediterranean coast are littered with waymarked hiking trails which traverse thick forests and isolated beaches to reach rural villages and ancient ruins. The region is home to many day hikes as well as Turkey’s first long distance hiking trail, The Lycian Way, which continues for 540 km along original roman roads and forest trails to fantastic viewpoints and Lycian cities, through national parks and over nearly 2,000 metre high mountain passes. The entire trail should take around 30 days but hiking shorter sections for 2-5 days is also a fantastic experience and unique way to explore Turkey’s Mediterranean Coast.

RedFrog Rum Bar: a poolside watering hole offering the quintessential Caribbean vacation vibe with refreshing Caribbean rum-based frozen drinks and beers, including Carnival’s own private label draught brew, ThirstyFrog Red.
BlueIguana Cantina
